2 cups dry long grain white rice
4 cups water
3 tbsp olive oil
2 tbsp salt
In a large saucepan with lid, add olive oil and heat over medium heat. Add the rice and stir to cover all grains with the oil. Fry with the olive oil for about 1 minute, stirring frequently. Add 4 cups of boiling water and the salt and stir. Cover the pot tightly and reduce heat to low and let it simmer.
Cook on low heat for about 20-25 minutes. Once the rice is done, remove from heat, uncover and stir with a fork.
Serve as a side dish.
