Boliche (Roast Stuffed with Ham)


3 lbs round roast

4 tbsp olive oil

6 large garlic gloves (chopped)

¼ cup flour

1 tsp salt

½ tsp ground black pepper

½ lb ground ham

2 onions (sliced)

2 bay leaves 

1 cup white cooking wine

2 tsp oregano

2 tsp paprika

1 green pepper (chopped)

1 (8oz) can tomato sauce


Rub the outside of the roast with some garlic and using a thin sharp knife, cut small slits and insert garlic pieces all around the roast. Mix flour with salt and ground pepper and cover the roast to form a coat. Using a sharp knife, make a long cut down the center to create a pocket (make an “X” cut). Stuff with ground ham.  

Using a Dutch oven or large pan, heat the oil over medium-high. Brown roast on all sides. Reduce heat to medium and add all the remaining  ingredients. Simmer for about 5 minutes, cover, reduce heat to low and cook for about 3 hours. Turn roast every 40-45 minutes.

Slice, serve and garnish with the sauce in which it cooked.

Servings: 6-8 portions
