3 white yams (Boniato or Cuban sweet potato)
Vegetable Oil (for deep fry)
Sugar (to taste)
Cinnamon (to taste)
Rinse, peel and cut sweet potatoes in rounds of about 1/8 of an inch. Deep fry in vegetable oil, turning them once golden on one side. Remove and use a paper towel to dry. Sprinkle with sugar and cinnamon to taste.
