Ensalada de Aguacate (Avocado Salad)


1 head Iceberg  or Watercress lettuce (cut into bite pieces)

2 avocados (cut in half lengthwise and sliced)

1 onion (thinly sliced)

½ cup olive oil

Salt and pepper to taste

3 tbsp white vinegar or 1 lime juice

1 tsp parsley (finely chopped)


In a mixing bowl, add the lettuce and the avocado pieces. Add the onions and then, salt and pepper to taste. In a separate mixing bowl, whisk the oil and vinegar. Slowly drizzle the oil mixture over the salad and sprinkle the chopped parsley.
