Ensalada de Papas (Potato Salad)


1 lb Small red potatoes (cut into ½”)

2 bn scallions (white and part of green-sliced)

3 cups black beans (cooked)

1/2 cup mayonnaise

1/2 bn chives (thinly sliced)

1 cup sour cream

1 tbsp Freshly squeezed lemon juice

1/2 tsp salt

1/2 tsp Freshly ground white pepper


On a large pot, add water and salt and bring to a boil. Add and cook potatoes until tender (10-15 min). Set aside. Once cool, place potatoes into a large bowl and add black beans.

Using a blender, combine scallions, lemon juice and sour cream. Mix for a few seconds and then mix again until it turns into a puree consistency. Add mayonnaise, salt and pepper. Continue blending to combine ingredients. Pour a little vinaigrette over salad, tossing, until potatoes and beans are coated. Garnish with chives.
