4 medium sized avocados
2 small onions (grated)
8 oz (1 cup) sour cream
2 tbps red wine vinegar
½ cup mayonnaise
2 cups chicken broth
¼ cup lime juice
2 tsp salt
4 packages (envelopes) unflavored gelatin
Pour broth in a medium pot over low heat and sprinkle gelatin over broth. Stir constantly until melted. Add onion, lime juice, vinegar. Chill mixture.
Cut and peel avocados and beat until smooth and creamy. Using a blender, mix avocado with mayonnaise, sour cream and the broth mixture, and add salt to taste.
Pour mix into a mold and refrigerate for about 4 hours or until firm.
