Pollo Frito (Fried Chicken)


4 lb chicken pieces (skinless)

2 lime juice

½ cup sour orange juice

1 tbsp dry wine

5 garlic cloves (minced)

1 onion (thinly sliced)

1 tsp cumin

¼ cup olive oil

1 Red bell pepper (chopped)

Salt and Pepper to taste


Rinse chicken, pat dry and place on a separate dish. In a mixing bowl, add lime, sour orange juice, wine, garlic and cumin. Mix well, add the chicken pieces and coat them well with the mixture. Add the onion on top, cover the bowl, refrigerate and let it marinade for about 3-4 hours.

Add olive oil to a large skillet or frying pan. Heat over medium. Carefully, add chicken without the marinade and fry both sides until lightly golden. Add the onion and bell pepper and sauté with the chicken for a few seconds. Reduce heat to low, add the remaining marinade, add salt and pepper to taste, mix and cover. After 5-7 minutes turn chicken pieces over and continue cooking for additional 20-30 minutes, or until chicken is done, (you may turn them over again, about 5 minutes before they are done).
